This delicacy, perfect for breakfast, is easy to make and turns any meal into a feast. The secret to making potatoes perfectly crisp is to dry them before cooking and use plenty of butter. You can make hash browns with raw or boiled potatoes. See how.

Ingredients

  • 4 medium red potatoes (or any high starch variety)
  • 2 tablespoons of butter
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper

Steps

Method 1 of 2: Method One: with raw potatoes

Make Hash Browns Step 1

Step 1. Peel the potatoes

Wash potatoes well in cold water; then peel them using a small knife or a vegetable peeler. Red potatoes, like any type of high starch potato, work best in this recipe.

Step 2. Grate the potatoes

Line a bowl with a clean dish towel, then grate the potatoes directly into the bowl with a cheese grater.

Step 3. Squeeze the potatoes

You should get as much water out of the grated potatoes as possible. This is the most important step in getting crispy potatoes. Hold the corners of the dishcloth with the shredded potatoes and wring the cloth into a tight bundle. Continue to wring the cloth and crush the potato with your fist until you get as much liquid out of the potato as possible.

If you prefer, squeeze the potatoes with a potato masher. You don't need to run the potatoes through the juicer; use it only to remove the water

Step 4. Heat the skillet

Heat a large skillet (preferably cast iron) over medium-high heat. Add the butter to the skillet and wait for it to melt. When the butter has melted, add the grated potatoes to the pan and mix well with the butter. Season with salt and pepper.

Step 5. Saute the potatoes

When the potato is mixed with the butter, flatten it using a spatula to maximize the contact area with the hot pan. It can't be more than 2 centimeters thick. Brown for 3 to 4 minutes on the first side, turn and brown for 2-3 minutes on the other side. The hash browns will be ready when both sides are crispy and golden.

Step 6. Serve

Slide the hash brown from the skillet onto the plate, or use a large spatula. Cut it into pieces if necessary. Serve without any seasoning, with pepper or ketchup, or with bacon and eggs, if you want a full breakfast.

Method 2 of 2: Method Two: with boiled potatoes

Step 1. Cook the potatoes

Wash raw potatoes thoroughly in cold water. Bake or cook potatoes.

  • If you choose to cook the potatoes, place them in a large pot and cover with cold water. Boil water and then cook until potatoes are tender. It takes about 20 minutes.
  • If you prefer to cook the potatoes, prick them with a fork 3 or 4 times. Wrap the potatoes in aluminum foil or place them directly on the grill in the middle of an oven preheated to 180 degrees Celsius. The potato will bake in about an hour.
  • If you have leftover baked potatoes from a previous meal, you can use them to make hash browns.

Step 2. Allow to cool before peeling them

Allow the boiled potatoes to cool. Put them to rest overnight in the fridge, if possible. When the potatoes are cool, peel them with a small knife or vegetable peeler.

Step 3. Grate the potatoes

Grate the potatoes with a cheese grater. They will fall apart very easily as they are so soft. At this point, you can either cook them or freeze them.

To freeze, line them up on a baking sheet. Place the pan in the freezer for a few hours or until the potatoes are frozen. Then transfer the potatoes to freezer bags

Step 4. Heat the skillet

Heat a large skillet (preferably cast iron) over medium-high heat. Add the butter to the skillet and wait for it to melt. When the butter has melted, add the cooked and shredded potatoes to the pan and mix well with the butter. Season with salt and pepper.

Step 5. Saute the potatoes

When the potato is mixed with the butter, flatten it with a spatula to maximize the contact area with the hot pan. It can't be more than 2 centimeters thick. Brown for 3 to 4 minutes on the first side, turn and brown for 2-3 minutes on the other side. The hash browns will be ready when both sides are crispy and golden.

If you use pre-prepared frozen potatoes, cook in the same way. This will only take a few more minutes
