Part 1 of 3: Removing the Bark
Step 1. Kill the crab humanely before removing the shell
If using a live blue crab, soak it in a large bowl of ice water for two to three minutes to shock. Then remove him from the water and place him on his back. Use a knife or an ice pick to pierce the animal's shell 2.5 cm below the mouth.
You can also boil the crab for a minute to kill it. Put it to sleep alive in the freezer for 15 minutes before boiling it. Then remove it from the freezer and place it in a pot of boiling water. Let it cook for a minute with the pan uncovered. After that time, remove it with a tongs and immerse it in a bowl of ice water to suspend the cooking process
Step 2. Pull the top of the crab shell with your fingers
Place your thumbs in the small opening on the back of the crab. Pull in opposite directions with your thumbs until the top of the shell separates from the rest of the animal's body. Throw away what to remove.
The two border legs of the crab should come out when you pull the shell. If that's not the case, gently pry them out of his body
Step 3. Remove the animal's abdomen
Lay him on his back, leaving the bottom facing up. Run a knife under the edge of the abdomen, which looks like a triangle. Use the knife to lift this part and pluck it from the crab's body with your fingers.
Part 2 of 3: Cleaning the Interior
Step 1. Remove the gills from the blue crab
The gills are thin gray muscles located on both sides of the animal's body. To remove them, just grab them with your fingers and pull them. After that, discard them.
Step 2. Take out the viscera
The area between the animal's gills is full of viscera. Break the thin tissue covering the crab's organs with your fingers, then use your fingers or a spoon to remove them from inside the crab's body. After removing all the entrails, throw them away or keep them as a seasoning for crab meat.
Be careful not to discard the white meat. It is on both sides of the animal, underneath where the gills were
Step 3. Wash thoroughly
Place it under the faucet or soak it in a bowl of water to wash it. Wash and remove any remaining viscera or tissue from the body before proceeding.
Part 3 of 3: Cutting the crab into four parts
Step 1. Cut the crab in half lengthwise
Lay it down in its normal position and place the blade of a knife in the middle of the animal's body length. Press the top of the knife down with your free hand to make a sharp cut and separate the two halves of the crab.
Step 2. Cut into four pieces
Take one of the crab halves and place the knife blade in the middle of the four legs. There should be two legs on each side of the knife. Push it down to cut the crab piece in half. Repeat for the remaining half.
Step 3. Store the blue crab on ice until ready to cook
