It doesn't matter if you've made your own humus from scratch or if you've bought a large quantity at the supermarket, it's always good to know how to freeze humus. It is also important to know that its consistency and flavor can change when freezing. Humus should be kept in a closed container when frozen to retain moisture.
Part 1 of 3: Preparing Humus for the Freezer
Step 1. Place the humus in a container with a lid using a spoon, no matter if it is homemade or from the supermarket
Use a spoon or spatula to remove all the humus from the bowl or container. Press well on the corners of the container to get as much as possible.
- Most types of Tupperware leave the container tightly closed, as do other brands of plastic containers.
- Avoid freezing humus in plastic bags as it can get crushed. Also avoid freezing in a glass jar as it can break if dropped from the freezer.
Step 2. Allow space for the humus to expand
Do not fill the container to the end. Due to the water content, the humus will expand during freezing. Frozen humus will peel the lid off the container if you fill it completely.
For example, if you have enough humus to fill two large plastic Tupperware, use three and leave a 3 cm space around the edge of each container
Step 3. Place some olive oil on top of the humus
A thin layer of oil will help retain moisture and prevent dryness. Put the oil straight from the bottle. Alternatively, if you are afraid of pouring too much, pour it into a measuring cup. It is not necessary to measure the oil, just add enough to form a thin layer on the surface of the humus.
If the humus dries out during freezing, the consistency will be grainy and taste like frost-burned humus
Part 2 of 3: Freezing the humus
Step 1. Freeze in small batches to avoid spoiling the humus
This will also make it easier when defrosting; you will be able to thaw an adequate amount, rather than defrosting a large container at once.
To freeze in small shipments, use small plastic containers
Step 2. Label the humus container
You will need a permanent marker to write on the plastic container. Write “humus” and the date, month and year you froze the product. This will help monitor how long the humus has been frozen and how much longer you can leave it in the freezer.
If you have frozen humus in a plastic container, but would still like to reuse the container when the humus runs out, write the date on a tape and stick to the lid. After eating, remove the tape and throw it away
Step 3. Consume the humus every six to eight months
If you leave it in the freezer for more than a month, the humus may be burned by the ice or it may lose most of its flavor. Plan to eat everything before six months. Otherwise you will have to throw it away.
If you think you won't be eating frozen humus for six to eight months, ask your friends and family if they want some. Plan better in the future and don't buy or make more humus than you can eat in six months
Part 3 of 3: Thawing Humus
Step 1. Place the frozen humus in the refrigerator for 24 hours
Thus, the product will defrost slowly and evenly, different from what it would be in the microwave. In the refrigerator, the humus may slowly become soft again and may retain its natural flavor and texture.
When the humus is completely defrosted, mix it with a spoon if the texture is not uniform. There may also be a little oil on top
Step 2. Know that there will be a slight change in flavor and texture
Due to the expansion of the water during freezing, you will notice that the product will be a little more grainy. The overall flavor and consistency may also change after it has been frozen.
The longer you leave the humus in the freezer, the greater the changes in consistency and flavor
Step 3. Improve the flavor of the humus with spices
Add new flavors if you find that the thawed humus doesn't taste as good as it used to. Put some paprika, cumin and black pepper on top for a fresher taste.
- Another option is to finely chop an onion, pepper and a clove of garlic and add these flavorful ingredients to the defrosted humus.
- All these spices are found in the supermarket. You can also go to a health food store or a spice store to find a wider variety and fresher spices.
