For all onion lovers, storing a little of this seasoning in the freezer ensures that it will never run out. The important thing is to prepare the onion right to go to the freezer and not lose its flavor. Even if you can freeze sliced onions, it's a good idea to blanch or make a paste of them to help bring out the flavor for when you're going to use them.
Method 1 of 3: Freezing Onion the Easy Way
Step 1. Peel and cut the onion
To prepare it for the freezer, use a sharp knife to cut the tip (about 1.3 cm). Then cut in half. Take the thinnest rind and chop as you prefer..
- Do not chop into pieces smaller than 1, 3 cm, as they will be surrounded by ice if they are too small.
- It can be sliced instead of chopped, if you are going to use it in a dish that has onion slices.
Step 2. Place the onion in a freezer-safe plastic bag
Put the onion in a bag. Once you've cut the size you want, place the pieces in a plastic bag made to go to the freezer. Make a single, flat layer to prevent everything from sticking together when freezing. Get all the air out and close the bag.
- If freezing multiple onions, place the scattered pieces on a baking sheet without overlapping them to prevent them from sticking together. Freeze like this for two to three hours, and when they're partially frozen, you can put them in the freezer without worry.
- Use a plastic bag thick enough to protect the onion from frostbite and keep the aroma contained. If the bag looks too thin, use two.
Step 3. Write on the outside of the bag and freeze
Before putting the onion in the freezer, get a pen and write down the date, the type of onion and how long it will be good. Place the bag in the freezer, taking care to keep the onion pieces in one layer when fitting.
- Onions can be kept in the freezer for up to six months.
- If you are freezing multiple onion bags, place them on top of each other to save space. You just have to be careful to keep each bag with just one layer of onion.
Method 2 of 3: Blanching the onion before freezing
Step 1. Peel and chop the onion
Prepare them by cutting the ends with a sharp knife. Then remove the thin shell by pulling it with your hand. Take the knife and chop the size you like.
Step 2. Boil a pot of water
Fill a large pot with water and place it on the stove. Turn the heat on high and bring the water to a good boil, which takes 10 to 20 minutes, depending on the amount of water.
The amount of water will depend on the amount of onion to be blanched. For every 380 grams of onion, use 4 L of water
Step 3. Place the onion in the pan and boil for a few minutes
Once the water has boiled, put the onion in it. Cover the pan and cook for three to seven minutes, depending on the amount.
- The more onions to be scalded, the longer you have to leave them in boiling water.
- If the onion is chopped, it's easier to put it in a frying basket or slotted spoon and then pour it into boiling water. That way you can take the pieces off easily and quickly when you're done. If you don't have a frying basket or metal colander, take the onion out of the water with a slotted spoon.
Step 4. Place the onion in a bowl of cold water
Once the onion is removed from the boiling water, place it in a bowl of ice or ice water. Leave the onion there for as long as it was boiling.
- Ice or ice water should not be more than 15°C.
- While the onion is in the cold water, stir several times to ensure uniformity.
Step 5. Drain the onion and place in plastic bags made to go to the freezer
Once the onion has cooled well, drain the water. Shake well to remove excess and dry with a clean dish towel. When dry, place in plastic bag.
Set the freezing date so that you can find out how long that onion has been in the freezer later
Method 3 of 3: Making Onion Paste to Freeze
Step 1. Peel the onion and cut into pieces
Use a knife to cut the ends of the onion so that you can pull the thin skin out with your hands. Then cut into pieces, preparing to make the paste. Do not chop or cut the onion into cubes, just cut small pieces to go to the blender.
The blender's crusher is the guide for how big the pieces should be. If it's not big, the pieces have to be small. If it's big, cutting the onion into eight is enough
Step 2. Put the onion in a blender and make the paste
After cutting all the onions into pieces, place them in a blender. Beat well until it turns into a thick paste with no visible pieces.
- If freezing a lot of onions, make several batches to go to the blender. If you overfill, the device won't work as well as it could.
- If your blender motor isn't too strong, push the onion pieces down so they hit the blades. Do this by placing the handle of a large metal spoon into the opening in the blender lid before placing it in the jar. The round tip of the spoon should be inside the cup so that when it starts to hit you can press the pieces down. Because the handle is round, it won't get caught in the blades.
Step 3. Place paste in ice cube trays and freeze
Once done, use a spoon to pour the chopped onions into an ice pan. Place the mold in the freezer and let it harden, which will take about four hours.
Cover the pan with plastic wrap to prevent the smell of the onion from permeating other foods
Step 4. Transfer the onion cubes to a plastic bag and place in the freezer
Once the cubes of onion paste have frozen, take them out of the tin. Put it in a plastic bag to go to the freezer and leave it there until ready to use.
- Remember to set a freeze date to ensure you will use everything within six months.
