A marinade is a broth with herbs, oils and acids used to add flavor to meats. This combination of ingredients makes the meat more tender and tasty. There are hundreds of recipes, but the ideal ones for ribs are the most spicy or bittersweet. First, start by preparing the rib: thaw it, remove the membrane that covers the piece and wash it. Then make a barbecue-flavored, Asian-inspired or coffee molasses marinade and cook the rib. Try to prepare everything in advance and marinate the ribs overnight to make it delicious.
Marinade for roasts
- 1 bottle of barbecue sauce.
- 1 bottle of beer (optional).
- Honey to taste (optional).
- Pepper sauce to taste (optional).
- Lemon juice to taste (optional).
- Garlic to taste (optional).

- 1 cup of vegetable oil.
- ½ cup apple cider vinegar.
- 3 compressed tablespoons of brown sugar.
- 1 tablespoon of soy sauce.
- 1 tablespoon Worcestershire sauce.
- 1 tablespoon of garlic powder.
- ½ teaspoon of powdered onion.
- ½ teaspoon of coarse salt.
- 1 cup of honey.
- ⅓ cup of soy sauce.
- 3 tablespoons of sherry.
- 2 teaspoons of garlic powder.
- ½ teaspoon of red peppers.
Coffee molasses marinade
- 1 cup of strong coffee.
- 1 red onion.
- ½ cup of molasses.
- ½ cup of red wine vinegar.
- ¼ cup of Dijon mustard.
- 1 tablespoon Worcestershire sauce.
- ¼ cup of soy sauce.
- 1 tablespoon of hot sauce.
- 2 tablespoons of shallot.
- 2 liters of cola soda.
- 2 tablespoons of chili powder.
- 1 cup of water.
- 1 onion.
- 2 garlic cloves.
- 100 ml of ketchup.
- 2 tablespoons of brown sugar.
- 2 tablespoons Worcestershire sauce.
- 2 tablespoons of apple cider vinegar.
Method 1 of 2: Marinating the Rib
Step 1. Thaw the rib in the refrigerator for two to four days
Before putting it to marinate, the rib must be completely thawed. The safest and easiest method of defrosting is in the refrigerator for two to four days.
With this method, the rib takes a day to thaw for every 2 kg of meat
Step 2. Thaw the rib in a few hours in cold water
Fill a bowl or sink tub with cold water. Immerse the entire piece in water, keeping it in the original packaging or under vacuum. Replace cold water when necessary to keep the temperature around 5 °C.
Using this method, each 500g of meat takes 30 minutes to thaw
Step 3. Wash the defrosted meat with cold water
Unwrap the rib and rinse it under cold running water, eliminating any bone fragments or debris that may be on the piece.
Step 4. Remove the webbing from the underside of the rib
This membrane is a paper-thin sheath that sits on the side of the bone. Oftentimes, the rib comes without it. If not, insert a butter knife between the bone and the skin to separate them. This cover should come off easily, but otherwise use a sharper knife. Then, pull the film with your hands to detach it from the bone.
If you leave the membrane on the rib, it has a hard, rubbery texture
Step 5. Rub the marinade onto the piece
Spread the marinade over the meat with a brush, spatula or your hands. Cover the entire surface of the piece, on both sides, with a thick layer.
Step 6. Place the rib in a container with a lid and refrigerate for two to 24 hours
Allow the meat to soak up the marinade for at least two hours or up to 24 to make it tastier. Keep it moist, adding more sauce every three hours.
Always let the meat marinate in the refrigerator and do not reuse the leftover marinade
Step 7. Grill or bake the rib in the oven to give it a smoky flavor and a smooth texture
Grill the meat in indirect heat for about an hour and finish it on direct heat for 20 minutes or until it is cooked through. Another option is to prepare it in an oven at 140 °C for about 2 hours.

Method 2 of 2: Making Various Types of Marinades
Step 1. Use ready-made barbecue sauce to make a simple, tasty marinade
If you want a quick and easy recipe, just spread ready-made barbecue sauce on the rib and let it marinate for at least an hour. You can also add flavor by adding honey, pepper sauce, lemon juice or garlic to taste. Another option is to use a bottle of beer in the sauce.
To make things even easier, try cooking the rib in a slow-cooker
Step 2. Make a steak marinade to recreate the classic flavor
Mix 1 cup vegetable oil, ½ cup apple cider vinegar, 3 tablespoons brown sugar, 1 tablespoon soy sauce, 1 tablespoon Worcestershire sauce, 1 tablespoon garlic powder, ½ tablespoon of onion powder and salt tea to taste in a large bowl. Marinate the rib for at least two hours or, preferably, overnight. If you don't have a large enough container, put the rib in a very large plastic bag or cut it in half and separate it into two containers.
Separate a little of the marinade before adding the meat to sprinkle the finished rib
Step 3. Use bittersweet and spicy spices to create an Asian-inspired marinade
Mix 1 cup honey, ⅓ cup soy sauce, 3 tablespoons sherry, 2 teaspoons garlic powder and ½ teaspoon red pepper. Heat the mixture over medium heat and stir the ingredients well. Allow the sauce to cool completely before placing it on the meat. Marinate the rib for 12 hours to enhance the taste.
If you want a spicier marinade, add more chili
Step 4. Create a unique flavor with molasses and coffee
Chop 1 onion and 2 tablespoons shallot and saute them over medium heat with 1 cup strong coffee, ½ cup molasses, ½ cup red wine vinegar, ¼ cup Dijon mustard, 1 tablespoon Worcestershire sauce, ¼ cup soy sauce and 1 tablespoon pepper sauce. When all the ingredients are combined, remove the pan from the heat and set aside 1 cup of this sauce for watering the meat later. Allow the rest to cool and marinate the meat for at least two hours.
You can also add extra sauce while cooking
Step 5. Use the classic cola soda to make a different marinade
Use 2 liters of cola soda and add 2 tablespoons of chili powder, 1 cup of water, 1 onion, 2 cloves of garlic, 100 ml of ketchup, 2 tablespoons of brown sugar, Worcestershire sauce and vinegar of apple. Add salt and cayenne pepper to taste. Heat the mixture over medium heat until it thickens. Allow it to cool and blend the sauce in a blender for a minute or until it is smooth.
