Green beans are a smaller, sweeter and much tastier variation of lima beans. Beans are not only super-nutritious, but they're also easy to find and prepare: you just need a few basic kitchen utensils and a little time to cook a delicious, healthy pan of green beans.
Simple green beans
Serves 4 servings.
- 1 cup (240 g) of dried green beans.
- 4 cups (950 ml) of water.
Seasoned green beans
Serves 4 servings.
- 910 g of fresh green beans (or a pack of 300 g of frozen beans).
- 1/2 teaspoon (2.5 ml) of salt.
- 2 tablespoons (30 ml) of butter.
- 1/4 tsp (1.5 ml) with ground pepper.
Green beans with chicken broth
Serves 4 servings.
- 1 package of 170 g of frozen green beans.
- Non-stick kitchen spray.
- 1/2 medium onion cut into thin slices.
- 1 ½ cups (350 ml) of chicken stock.
Serves 6 servings.
Method 1 of 3: Preparing Simple Green Beans
Step 1. Pick and wash the beans
Fill a cup (240 g) with green beans and spread the beans on a baking tray or dish towel. Remove chipped or wrinkled beans and other debris and wash the beans in cold water in a sieve.
Step 2. Soak the beans overnight
Fill a bowl with 5 cm to 7 cm of water at room temperature and place the beans in it. Leave them to soak overnight. If you can't wait all night, let the beans soak for at least eight hours. Then drain the water and wash the beans in cold water one more time.
- If your kitchen is too hot, soak the beans in the refrigerator.
- Soaking beans helps eliminate sugars that are not well digested by the human body.
Step 3. Place the beans in the pan
If you prefer, use a pressure cooker. Fill it with four cups (950 ml) of water for each cup (240 g) of beans. The water should cover the grains by about 2.5 cm to 5 cm. To cook more than one cup of beans, add four cups of water for each extra cup of beans.
Step 4. Boil the water
Lower the heat as soon as the water starts to boil and cook the beans for about 45 minutes. If using a pressure cooker, cook it for three to five minutes.
Step 5. Serve the baked beans
Take them to the table as an accompaniment or mix them with a salad, soup or casserole. To serve the beans as a garnish, season them with a little butter or pepper. Fresh beans can last up to a week in the fridge, but once cooked they have a shelf life of just one day.
Method 2 of 3: Prepare the seasoned green beans
Step 1. Wash the beans
Take the 910g, or 300g packet, of beans out of the carton. The amount of frozen beans is smaller because the beans are already shelled. Pick up the dirt from the middle of the beans and wash the beans in cold water in a sieve. Then drain off excess water.
Step 2. Add water, salt and beans to the pan
Fill a pot with two cups (470 ml) of water. Then add the beans and half a tablespoon (2.5 ml) of salt.
Step 3. Light the fire at medium temperature
Cook the beans until they are soft, stirring them occasionally so they don't stick together. This should take about 30 minutes.
Step 4. Drain the broth
Remove excess water from the pan as soon as the beans are finished cooking and add two tablespoons of butter. Stir well to mix ingredients.
Step 5. Season with black pepper
Add 1/4 tablespoon ground pepper to beans and remove from pan. Serve at desired temperature.
Method 3 of 3: Cooking Beans with Chicken Broth
Step 1. Heat the pan on the fire
Place a large pot on a medium heat and spread it with a non-stick cooking spray.
You can store the covered beans in the refrigerator for a few days
Step 2. Saute the onion
Cut half an onion into thin slices and place them in the preheated pan, stirring frequently. Saute the onion until it is soft and translucent. This should take between five to seven minutes.
Step 3. Add chicken stock
Place one and a half cups (350 ml) of chicken stock in the pan and bring to a boil. Use the type of broth you prefer.
Step 4. Add beans
Turn a 170g bag of green beans into the pan. Due to freezing, you do not need to pick, wash or soak the beans. Fill the pan with enough water to completely cover the beans.
Step 5. Light the fire on a high temperature
Boil the broth and lower the heat completely. Then cover the pan and cook the beans for half an hour, until they are tender.
- Baked beans can be stored for up to a week in the refrigerator or six months in the freezer.
- Add a little spice if you find the beans tasteless. Try, for example, using a little garlic powder.
