Step 1. Take an ovenable skillet and turn it on at 230°C

You can use a skillet made of cast iron or any other material that can be placed in the oven. Then preheat the oven with the skillet inside while you prepare the pork loin.

Take one or two pieces of loin (from 500 to 700 g in total). Dry each with a sheet of paper towels and look for the thin membrane that lines the meat. If you find it, take it off so the loin doesn't get stiff.

Step 3. Sprinkle with salt and pepper

Mix ¼ cup of salt and 4 cups of warm water in a large zip-lock bag, shake it and dissolve the salt. Add 2 tablespoons apple cider vinegar, 2 tablespoons brown sugar and 1 cup ice cubes. Then put the pork loin in the bag and refrigerate it for 20 minutes.

  • When it's time to bake, take it out of the bag, wash it, dry it and put it in the oven.
  • Avoid salting the pork for more than 20 minutes as it can become soft.

After preheating the skillet, place it on high heat. Add the oil and tilt it to cover the entire bottom.
