Not sure what to make for dinner? How about pork loin? The loin is a thin, boneless cut, so it's a po-pom for cooking. Besides, there are a thousand and one spice options. Method 1 of 2: Roasting the Sirloin

Step 1. Take an ovenable skillet and turn it on at 230°C

You can use a skillet made of cast iron or any other material that can be placed in the oven. Then preheat the oven with the skillet inside while you prepare the pork loin.

Step 2. Dry the loin lightly with a paper towel and remove its membrane

Take one or two pieces of loin (from 500 to 700 g in total). Dry each with a sheet of paper towels and look for the thin membrane that lines the meat. If you find it, take it off so the loin doesn't get stiff.

Step 8. Let the meat rest for ten minutes

Mix ¼ cup of salt and 4 cups of warm water in a large zip-lock bag, shake it and dissolve the salt. Add 2 tablespoons apple cider vinegar, 2 tablespoons brown sugar and 1 cup ice cubes. Then put the pork loin in the bag and refrigerate it for 20 minutes.

  • Avoid salting the pork for more than 20 minutes as it can become soft.
