The strip roast is the cut taken from the back rib of the ox, which is cut into strips across the bones. Meat cut like this is marbled, with fat and gristle intermingled, making it ideal for slow cooking. No matter how you prepare the meat, leave it on a low heat for a long time so that it is so tender that it will easily come off the bone.



  • 3 cups (0.7l) dry red wine
  • 3 sprigs of dry thyme
  • 1/2 teaspoon (1.15g) black pepper
  • 2 bay leaves
  • 170 g of chopped tomatoes
  • 2 cups (0.5l) of beef broth
  • 2 crushed garlic cloves

Method 1 of 2: Braised Strip Roast

Step 1. Thaw the strips for a day in the refrigerator

Make sure they have enough time to thaw. You don't want to defrost tougher pieces of meat, like this one, in the microwave.

Step 2. Mix a marinade

There are several types of marinade that work well with ribs, including red wine, stout and Asian-style marinade. If you are using the red wine marinade detailed above, combine the red wine, broth, garlic, tomatoes, bay leaves, black pepper and thyme.

Step 3. Pour marinade into a sealed plastic bag

Place the thawed strips of meat in the bag. Seal it and turn it over several times to cover the meat.

Step 4. Leave the bag in the refrigerator for four hours

The longer the meat marinates, the more intense its flavor.

Step 5. Remove the strips from the refrigerator and plastic bag

Dry them with some paper towels. Reserve the marinade.

Step 6. Heat two tablespoons of oil in a low iron pan over medium heat

Place the strip roast in the heated pan to brown. Brown for three minutes on each side.

Step 7. Remove the roast from the pan and place it on a platter

Leave approximately two tablespoons of oil in the pan.

Step 8. Chop an onion, two large carrots and two celery stalks

Put everything in the pan and sauté in oil until golden. Loosen any toasted pieces with a wooden spoon.

Step 9. Place the strips in the pan

Pour in reserved marinade. Heat to a boil.

Reduce heat and simmer for an hour and a half to two hours.

Set them aside and keep them warm.

Separate the fat if possible, or use it as a sauce. Serve right away.

Method 2 of 2: Oven Strip Roast

Step 1. Thaw 2.7 kg of strip roast for at least one day in the refrigerator

It may take up to two days for a complete defrost.

Step 2. Cut the strips into 5-6 inch pieces if they are not already cut this way

Step 4. Mix the dry seasoning as described above

If you have half a recipe, mix half of the dry ingredients.

Step 5. Rub the mixture into all the pieces

Cover them with plastic wrap and let them rest on the counter at room temperature for 1-2 hours.

Step 6. Preheat the oven to 149 degrees Celsius, near the end of the 1-2 hour rest time

Step 7. Place the ribs on a baking sheet with the fat side facing up

Cover the baking sheet tightly with aluminum foil.

Step 8. Place the baking sheet in the oven and leave for two and a half hours

Step 9. Remove the ribs from the oven and discard the foil

Adjust the oven temperature up to 220 degrees Celsius.

Step 10. Brush the surface of the ribs with half a cup of liquid honey

Return the pieces to the oven without foil. Cook for another 10 to 15 minutes to leave them with a thin, glossy coating.
