You've probably eaten gizzards sautéed with sauce or stewed, but did you know that it also looks great on the barbecue? Wash the chicken gizzards and marinate in a sweet and sour sauce or spiced with ginger, then place the pieces on skewers with peppers, if you like. To make the Filipino gizzard skewer recipe, you'll also have to simmer the meat with herbs and brush it with a pepper sauce when it's on the grill.

Ingredients

Gizzard and pepper skewers

  • 570 g of chicken gizzards.
  • ½ cup of oil.
  • 1 clove of garlic cut.
  • ½ cup Worcestershire sauce.
  • 4 tablespoons of dark brown sugar.
  • 1 teaspoon of vinegar.
  • 1 cup of tomato sauce.
  • 2 yellow peppers.
  • 2 red peppers.

Makes from 14 to 16 skewers

Philippine Gizzard Skewer (Balon–Balonan)

  • ½ kg of chicken gizzards.
  • ½ cup of vinegar.
  • 2 teaspoons of salt.
  • 1/2 teaspoon of peppercorns.
  • 1 piece of ginger about 1, 3 cm.
  • 2 garlic cloves.
  • 1 small onion.
  • 1 bay leaf.
  • 2 tablespoons of ketchup.
  • 2 tablespoons of hot sauce.
  • 1/4 cup of mustard.
  • 1/4 cup of honey.

Makes 12 to 16 skewers

Method 1 of 2: Making pepper gizzard skewers

Step 1. Mix the oil, garlic, Worcestershire sauce, sugar, vinegar and tomato sauce

Take a large bowl and add half a cup of oil, a teaspoon of vinegar and a cup of tomato sauce. Also add a chopped garlic clove, half a cup of Worcestershire sauce and four tablespoons of dark brown sugar and stir until the marinade is smooth.

  • You can use olive oil, coconut oil or vegetable oil.
  • Use white wine or apple vinegar to make the marinade.

Turn on high heat to bring the water to a boil. Once this happens, turn the heat down to medium or medium-low so that the water boils. Cover and cook until the gizzard is softer. The point is up to you.
