Are you trying to have a healthier diet but don't want to give up the taste? Have you ever thought about making turkey meatballs for a change? Season the meat with Parmesan, some Italian herbs and complete with breadcrumbs. After shaping the dough into balls, bake them in the oven until golden. If you have plenty of time, put the raw meatballs in a slow-cooking crockpot and cook until tender.

Ingredients

Classic Italian Meatballs

  • 1 cup of breadcrumbs.
  • ½ cup of finely grated Parmesan cheese and as much to serve.
  • ¼ cup of chopped fresh basil.
  • ¼ cup of chopped fresh parsley.
  • ¼ cup of whole milk.
  • 1 tablespoon of tomato paste.
  • ¾ teaspoon of salt.
  • ½ teaspoon of freshly ground black pepper.
  • 2 large eggs.
  • 2 chopped garlic cloves.
  • 1 small grated onion.
  • 500 g of ground turkey meat.
  • 500 g of turkey sausage without the outer membrane.
  • Extra virgin olive oil.
  • 4 cups of tomato sauce.

Makes four to six servings.

Meatballs in the crockpot

  • 500 g of ground turkey meat.
  • 100 g of turkey sausage without the outer membrane.
  • ⅓ cup of seasoned breadcrumbs.
  • ¼ cup of finely grated Parmesan cheese.
  • 1 egg.
  • 2 tablespoons of chopped fresh parsley.
  • 1 tablespoon of chopped fresh basil.
  • ½ teaspoon of salt.
  • Freshly ground black pepper (to taste).
  • 4 cups of tomato sauce.

Makes six servings.

Steps

Method 1 of 2: Classic Italian Meatballs

Step 1. Preheat oven to 200 ºC and line a baking sheet with parchment paper

Take a deep baking pan and a suitable piece of parchment paper to line it. Reserve.

The wax paper is not mandatory, but it is a way to prevent the meatballs from sticking to the bottom of the baking sheet, in addition to facilitating later cleaning

Step 2. Place the breadcrumbs, Parmesan, seasonings, milk and tomato paste in a bowl

Take a large bowl and add 1 cup of breadcrumbs, ½ cup of finely grated Parmesan cheese, ¼ cup of chopped fresh basil, ¼ cup of chopped fresh parsley, ¼ cup of whole milk, 1 tbsp. tomato paste, ¾ teaspoon salt and ½ teaspoon pepper.

Option:

to make gluten-free meatballs, replace the breadcrumbs with more Parmesan. For example, instead of using 1 cup flour and ½ grated cheese, use 1 ½ parmesan alone.

Step 3. Add eggs, garlic and onion

Break 2 eggs on top of the bowl and add 2 chopped garlic cloves. Grate a small onion on a grater, using the side with larger holes. Add it too.

Eggs serve to bind the meatballs

Step 4. Mix well to combine all ingredients

Use a wooden spoon to mix the breadcrumbs with the other ingredients. Continue to stir until the eggs are beaten. This step is for not having to stir the turkey meat too much and end up overdoing it.

Step 5. Add the turkey and add it to the rest

Add 500 g of ground turkey meat along with the inside of 500 g of turkey sausage. If you don't want to use sausages, double the amount of ground beef. Use your hands to mix the meat with the other ingredients and make everything very smooth.

Be careful not to stir too much, as the meatballs can lose their lightness and tenderness

Step 6. Make balls with the dough

Use two regular spoons or a brigadeiro measuring spoon to make meatballs that are less than 5 cm in diameter. Repeat until finished meat and make about 24 meatballs. Carefully pass the balls between your hands to give the final shape.

If the meat sticks to your hands, dip them in the warm water

Step 7. Arrange the meatballs on the baking sheet and place it in the oven

Place each meatball at least 1.5 cm apart on top of the parchment paper. Then pour a little extra virgin olive oil and place the baking sheet in the preheated oven.

Step 8. Bake them for 15 to 20 minutes

Let the meatballs cook until they reach an internal temperature of 75°C. Check with a cooking thermometer and also check the color: they should be very golden and dark.

Option:

if you prefer to prepare them on the stove, put 4 cups of tomato sauce in a pan and cover it. Cook them for 25 to 30 minutes.

Step 9. Serve turkey meatballs with pasta or bread

Take the roasting pan from the oven and place the meat on a platter with hot tomato sauce. Then serve the dish with pasta, rice or French bread.

Store leftovers in an airtight container for three or four days in the refrigerator

Method 2 of 2: Meatballs in the crockpot

Step 1. Place the breadcrumbs, cheese, egg and seasonings in a bowl

Take a bowl and add ⅓ cup of seasoned breadcrumbs and ¼ cup of finely grated Parmesan cheese. Break 1 egg on top and add the following seasonings:

  • 2 tablespoons of chopped fresh parsley.
  • 1 tablespoon of chopped fresh basil.
  • ½ teaspoon of salt.
  • Freshly ground black pepper (to taste).

Step 2. Mix well until everything is combined

Use a spoon to mix the ingredients and incorporate the egg. It, together with the breadcrumbs, serves to bind the meatballs so they don't fall apart in the crockpot.

Keep stirring until the mixture is uniform and no part of the dry breadcrumbs remains

Step 3. Add the turkey meat

Add 500 g of ground beef and another 100 g of turkey sausage without the cover to the bowl. Then mix everything with your hands.

Avoid dealing too much with the meat so as not to harden the meatballs

Tip:

if you don't want to use sausage, no problem. Put the same amount of ground beef even.

Step 4. Make 20 balls with the dough

Use an ordinary spoon or a brigadeiro measuring spoon to make meatballs less than 5 cm in diameter. Pass the meat ball between your hands to make it more rounded. Continue making meatballs until the meat runs out.

Do not squeeze the meatballs too tightly between your hands as they can become too thick and lose their softness

Step 5. Place the tomato sauce and meatballs in a crockpot

Choose your favorite sauce, which can be ready-made or homemade, and put 4 cups in the appliance. Then add the meatballs and cover the pan.

The meatballs should be almost completely covered by the sauce

Step 6. Cook them on low temperature for four to six hours

Turn the slow-cooker to the lowest temperature and let the meat cook well. Start checking after four hours.

  • If you don't have that much time, set them on high and cook them for three to four hours.
  • The meatballs must reach an internal temperature of 75°C. Check with a culinary thermometer.

Step 7. Serve the meatballs with rice or pasta

Turn off the pan and get the meat and sauce to serve over the rice or noodles. Another option is to toast a baguette and make a meatball sandwich.
